To prepare a flavorful and authentic South Indian sambar using Swasdi Sambar Powder, follow these cooking instructions:
Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 small lemon-sized ball of tamarind
- 2 tablespoons Swasdi Sambar Powder
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 carrot, chopped
- 1 potato, chopped
- 1 drumstick (optional), cut into pieces
- 1/2 cup mixed vegetables of your choice (such as okra, eggplant, pumpkin)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/4 teaspoon fenugreek seeds
- 2-3 dried red chilies
- A pinch of asafoetida (hing)
- Few curry leaves
- 2 tablespoons oil or ghee
- Salt to taste
- Fresh coriander leaves for garnishInstructions:
1. **Cooking the Toor Dal:**
- Rinse the toor dal thoroughly and cook it in a pressure cooker with enough water until soft and mushy. Alternatively, you can cook it in a pot on the stovetop until soft.2. **Preparing the Tamarind Extract:**
- Soak the tamarind in warm water for about 15 minutes. Squeeze the tamarind to extract the pulp. Strain the tamarind extract to remove any solids and set it aside.3. **Cooking the Vegetables:**
- In a separate pot, heat oil or ghee over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, fenugreek seeds, dried red chilies, and curry leaves. Sauté for a minute until aromatic.
- Add chopped onions and sauté until they turn translucent.
- Add chopped tomatoes and cook until they become soft and pulpy.
- Add chopped vegetables (carrot, potato, drumstick, mixed vegetables) and sauté for a few minutes.4. **Making the Sambar:**
- Add Swasdi Sambar Powder to the cooked vegetables and mix well.
- Pour in the tamarind extract and bring the mixture to a boil.
- Add cooked toor dal to the pot and mix well. Add water as needed to achieve the desired consistency.

- In a small pan, heat a tablespoon of oil or ghee.
- Add a pinch of asafoetida (hing) and fry for a few seconds.
